Erstens gibt es da Projekte.Im Beitrag von MacTv wurde auch gesagt, dass ZFS nicht bootbar ist.
... die frage ist eher ob inzwischen zfs-volumes als boot-volumes geeignet sind, das waren sie bislang nicht.

Volume Shadow Copy
The Volume Shadow Copy (VSC) service keeps historical versions of files and folders on NTFS volumes by copying old, newly-overwritten data to shadow copy (copy-on-write). The old file data is overlaid on the new when the user requests a revert to an earlier version. This also allows data backup programs to archive files currently in use by the file system. On heavily loaded systems, Microsoft recommends setting up a shadow copy volume on separate disk to reduce the I/O load on the main volume.
ZFS uses a copy-on-write, transactional object model. All block pointers within the filesystem contain a 256-bit checksum of the target block which is verified when the block is read. Blocks containing active data are never overwritten in place; instead, a new block is allocated, modified data is written to it, and then any metadata blocks referencing it are similarly read, reallocated, and written. To reduce the overhead of this process, multiple updates are grouped into transaction groups, and an intent log is used when synchronous write semantics are required.
