Please note: Starting with macOS Big Sur Apple has deprecated the ability to block system updates via the softwareupdate utility. Starting with macOS 11, Big Sur, OS updates will only be able to be deferred for 90 days following their release.

Auch kommerzielle Anbieter haben aktuell noch keinen Weg da herum, hier z.B. das Addigy Statement

Also, wer sich Big Sur installiert kann zukünftige Systemupdates von Apple nur noch maximal 90 Tage verzögern, aber nicht mehr verhindern.
