Die letzten beiden Updates scheinen meinem MBP nicht gut getan zu haben.

Seit 11.4/11.5 kann Apple Pay nicht mehr eingerichtet werden, scheinbar wegen Sicherheitsbedenken

Seit 11.5.1 habe ich beträchtliche Leitungseinbussen:
- Eingaben reagieren zeitversetzt, z.B. Lautstärke ein/aus erscheint die Meldung zeitversetzt auf dem Screen und Beachball erscheint
- In Safari ändert sich der Mauszeiger über einer Schaltfläche zeitversetzt und der Beachball erscheint kurz
- Nach Ruhemodus dauert es einen Moment, bis die Touch-ID Eingabe angenommen wird, ebenfalls erscheint der Beachball

Kille ich in der Aktivitätsanzeige "WindowSwever", komme ich Anmeldung zurück und alles läuft wieder prima... aber leider nicht lange, dann kommen wieder die Probleme.

Ich habe keinerlei nur Software installiert, nichts am System geändert, keine Sicherheitseinstellungen verändert.

Ja klar, so ist es. Ich habe keinerlei Änderungen am System vorgenommen, vor den Updates hat alles einwandfrei funktioniert, nach den Updates begannen die Probleme.
 
Selbst wenn dem System die "Sicherheit" fehlt, sollte das nicht mit Beachballs einhergehen.

Du hast Updates eingespielt, also hast Du Änderungen am System vorgenommen.
Beim einen sind es die Scanner, beim anderen (möglicherweise) das OneDrive, beim dritten…

Wieso MacOS? Ich meinte, was bei einzelnen nicht läuft (nach den macOS-Updates), das kam vielleicht nicht richtig rüber.

Aber noch eine andere Ergänzung: Ich muss schon etwas schmunzeln, wenn Systemupdates mit „keinerlei Änderungen“ bezeichnet werden.
Das sind mit die größten denkbaren Änderungen, in „jedem“ strukturierten Unternehmen gibt es dafür komplette Ablauf- und Testpläne, damit es hinterher nicht zu irgendwelchen Probleme kommt, die erst im Betrieb auffallen.

Damit es jeder versteht, ich habe keinerlei NEUE Software installiert, keine AKTIVEN Änderungen am System vorgenommen.

Ich habe nur Updates von macOS und der installierten Software vorgenommen, ausschliesslich von verifizierten Entwickler.

Für diese zwei Sätze brauchte ich 2 Minuten, Weill immer wieder der Beachball erscheint!
 
Ja, und damit du es auch verstehst: Eine Systemaktualisierung ist eine der größten Änderungen, die man vornehmen kann, ob jetzt aktiv von dir veranlasst, oder automatisch eingespielt. Aber das betrifft ja vorwiegend das ApplePay-Problem.

Welche von den anderen Tipps bezüglich der Systemlast hast du denn jetzt ausprobiert?

Der WindowsServer wird mit 500-600MB, bei Seiten mit viel Videos bis zu 1,2 GB RAM Speicher.

Nach Neustart vom MBP dauert es ca. 30 Minuten bis der Beachball wieder kommt und alles langsam wird.

Was hat jetzt die Auslastung des Arbeitsspeicher mit der CPU-Last zu tun?

Guck mal ins Protokoll. Es sind verschiedene Programme, die zu diesem Zeitpunkt Last erzeugen:
