dieses Problem dass er nicht ganz runter fährt tritt nur ab und an auf also nicht immer.

Das Log zum Kernel-Panic deutet auf einen Treiber hin "com.driver.LogJoystick", der Name eben auf einen Joystick oder ähnliche Hardware. Veraltete Kerneltreiber können durchaus solche Dinge verursachen.
Hast du sowas wie einen Joystick oder ähnliches am Mac und dazu Software installiert? Falls ja, aktualisiere die Software oder deinstalliere sie nach Herstellervorgabe, wenn du sie nicht mehr brauchst.

Dann schau beim Hersteller nach eine Anleitung. So hast du jedenfalls garantiert das Problem nicht beseitig. Sei es drum, wenn das immer deine Devise ist, dann rate ich auch dringend zur einer sauberen Neuinstallation ohne automatische Datenübernahme. Und dann in Zukunft so einen Müll gar nicht erst installieren.ja nur gelösch, weiß leider nicht wie man das richtig deinstalliert
Neuinstallieren von macOS
Du kannst „macOS-Wiederherstellung“ verwenden, das integrierte Wiederherstellungssystem auf deinem Mac, um macOS neu zu installieren. Die macOS-Wiederherstellung sorgt dafür, dass deine Dateien und Benutzereinstellungen intakt bleiben.
