I wouldn't recommend trying to remove the Classic components of OS X; it's extremely difficult to root out all of the Classic components, and if you delete the wrong file, you could disable OS X. You can remove OS 9 or install OS X without OS 9. Keep in mind that this will completely eliminate the possibility of running any older software. However, if that's what you're aiming for, there are a couple of ways to do it.
One method is to drag the OS 9 System folder to the Trash, but you'll have to do it while booted from OS X or from a System CD. Then delete the Applications (Mac OS 9) folder since you won't be able to use these applications under OS X. Warning: Don't delete the OS X System folder (it's labeled System, and the folder icon has an X on it).
Another option is to install only OS X and erase the entire disk using the Installer program. (You may want to back up your data files first.) Instead of starting the OS X Installer from OS 9, boot the Mac from the Mac OS X Installer CD (hold down the C key during startup). When booted, initiate the installer. At some point, you will be given the option to erase the drive before the software installs OS X. You'll have to reinstall any OS X applications you've previously installed.
